Vineyard: Block 7 - East Wing
1 ha block planted 1985 on a North - Western aspect with a row direction of East to West.
Soil Type
Glenrosa, a decomposed granite on the top slope of the block changing into a deep sandy alluvial soil at the bottom next to a stream.
Harvest Notes
Because of the unusual slopes of the block we harvested a variety of bunches from golden ripe to bright green. This combines in a perfect combination of bunches with strong ripe fruity flavor, to racy crispy green apple bunches.
Vinification
Inoculated with a commercial yeast and fermented at a temperature of 16ºC - a warmer and faster rate of usual fermentation for Sauvignon Blanc.
Maturation
Left on the fermentation lees for 3 months and then a further 2 months on the fine lees before stabilization and filtration prior to bottling.
