Description
This wine displays a brilliant deep straw colour. On the nose fragrant lemongrass, cassis leaf and passionfruit aromas emanate from the glass underpinned by hints of dry straw and notes of fresh brioche. There is a great intensity on the entry of the palate with flavours of quince jelly, guava and lemongrass on the mid-palate with hints of toasted almonds and a velvety creaminess. This all leads to a textured pithy finish with a stunning length and a freshness reminiscent of oyster shell.

Vineyard
This 100% Sauvignon blanc from a single 37-year-old bush vine vineyard in the Stellenbosch growing on decomposed shale soils.
The grapes were harvested at around 22,3 brix on the 7th February, picked into small grape crates and placed in a cold store overnight. The following day after bunch sorting the grapes were whole bunch pressed and the juice settled overnight before being taken to 400L old French oak barrels for fermentation. The fermentation is allowed to start naturally and once completed the wine is topped and matured sur-lie for 10 months with regular lees stirring.
