Vineyard: Golden Slopes
The Golden Slopes wine is named after the deep yellow coloured granite rocks found in this single vineyard planted in 1968.
Soil Type
Granite
Harvest Notes
The grapes are sorted in the vineyard to ensure only bringing the finest grapes to the cellar. Handpicked into picking crates and chilled overnight in a cool room.
Vinification
The grapes are pressed whole bunch and the juice is run-off directly to an old 1200L foudre. The fermentation takes a few months to complete naturally.
Maturation
The wine ages on top of it's gross lees in the 1200 L vat for around 11 months.
