Harvest Notes
The 2020 vintage afforded us a full ripe version of Cinsault to work with. Little bit of raisins and little to no green berries in between the bunches. Grapes were harvested in early morning in small lug boxes.
Vinification
Grapes were hand sorted, 90% destemmed and 10% left whole bunch. Care was taken not to over extract with only one punch down by hand done daily. After alcoholic fermentation the wine was racked to old barrels for malolactic fermentation.
Maturation
Maturation was done in neutral/old 225L barrels.
