Vineyard
a blend of two different vineyards. Both are located in the Paardeberg region, situated in granite soil. 90% of the grapes come from a dryland bushvine that was planted in 1973, the other 10% come form a younger dryland bushvine that grow 350m above sealevel.

Harvest Notes
We do two pickings on each vineyard, each of them provides us with different characteristics, giving the final blend more character and depth. All of the grapes were picked early in the morning, packed in crates and allowed to spend 24 hours in a cold room.
Vinification
we did bunch sorting and the grapes went to open top fermenters, 15% wholebunch and the rest wholeberry - were allowed to cold soak for 3 days before naturally fermentation start, with one punch-down per day. After fermentation, the wine is left on the skins for 7 days before pressing it to a combination of old 300L and 500L barrels
Maturation
The wine matured for 10 months before we racked, blending and bottling
