Vineyard: Road 6 Sauvignon Blanc
The vineyard was planted in 1983, with most of the block on the East side being trained via trellising systems and the West side via Guyot systems. This allows for excellent diversity within the block. The valley of the Simonsberg region where the block is located has excellent diurnal changes between the day and night, allowing for premium quality grapes to be produced.
Soil Type
Soil is composed of predominantly decomposed granite soils, along with fractions of Tukulu, Oakleaf and Hutton soils, allowing for excellent filtration.
Vinification
Desiccation (drying) of stalks was done on selected Sauvignon Blanc batches to allow for increased concentration of sugar levels. Whole-bunch grapes were cold-soaked for 24 hours, then pressed-off to holding tanks and left to settle for 2 days. The clean juice was racked (transferred) to stainless steel tanks and inoculated with select yeast strains. Fermentation was stopped through bentonite and SO2 additions, to achieve a certain sugar level.
