35 year old Vines, Dry Mediterranean Climate.
Vinification
The grapes are hand picked with a yield of 19 ton per hectare. Fermented in Stainless Steel tanks. Onset of fermentation is “wild”, and wine then inoculated after 2-3 balling has fermented out. Fermented between 13-15 degrees Celsius for 21 days.
Maturation
Racked and kept on fine lees.
